Frost to Sunset!

Frost on the lawn at 7:30am.                                                                                                                       Frost this morning on the lawns and on the  rooftops,  32 Fahrenheit, O Celsius , clear and sunny.

Perfect day for a lovely hot breakfast, Oatmeal with raisins, sprinkled with cinnamon.

For lunch heat up three cups of that chicken noodle soup that we cooked yesterday.  Here’s how my husband and I made it:

Chop carrots, celery and onion
Chop carrots, celery, onion and garlic.
Sweat the vegetables in vegetable oil.
Sweat the vegetables in vegetable oil, in skillet or in the bottom of large soup pot.

Move the sweated vegetables to large soup pot, add chicken broth and season to taste.  Bring to a boil and simmer  until vegetables nearly cooked.  While that is simmering prepare the chicken.

Shred the chicken
Shred the chicken and add to the simmering pot.  

At this point you may want to add extra water and bring it back to the boil.  Then add about six ounces of noodles and boil for eight minutes or however long the noodles take.

Recipe:

3 carrots washed and chopped into 1 inch medallions

3 stalks of celery, washed and chopped in

1 medium white onion, diced small

2 cloves of garlic, finely minced.

2 quarts of chicken stock.

1 and 1/4 lb of chicken tenders

Season to taste.  Salt, pepper, oregano, parsley, whatever is in your pantry. Enjoy!
